Stove Top Vegetable Beef Soup With Frozen Vegetables

I'm sure that every family has its own version of vegetable soup. Whether it's made with or without beef, maybe with chicken or just veggies alone, almost everyone I know has a fond memory of homemade vegetable soup.

I'm no different, but recently I've made a few changes to the classic recipe I grew up loving. I cook my soup slow and low in the Crock Pot, and I add a seasoning blend that takes it to a whole new level.

A bowl of this hearty Vegetable Beef Soup, along with some crusty bread and maybe a fresh salad thrown in for good measure, might just be the ultimate comfort food meal!

Ingredients To Make This Recipe

  • Ground Chuck
  • DAN-O'S Spicy All-Natural Seasoning
  • Onion
  • Potatoes
  • Crushed Tomatoes – 28 ounce can
  • Rotel Tomatoes And Chilies – 10 ounce can
  • Frozen Mixed Vegetables
  • DAN-O'S Original All-Natural Seasoning
  • Beef Broth – 32 ounce box
  • Water
  • Salt

Equipment Need

My favorite way to make this recipe is in the slow cooker. I use an 8 quart Crock Pot. You'll also need a cast iron or heavy bottom skillet to cook the ground chuck in.

3 Ways To Make Vegetable Beef Soup

You can make this soup using 3-different cooking methods. Now, that's a cooking win for sure!

Crock Pot:

  • Brown the ground beef, add spicy seasoning, then spoon it into a slow cooker.
  • Add in chopped onion, potatoes, frozen mixed vegetables, crushed tomatoes, tomatoes with chilies, seasoning and beef broth.
  • Cook on low for 6-8 hours.

Stove Top:

  • Brown the ground beef with spicy seasoning in a Dutch oven.
  • Add in chopped onion, potatoes, frozen mixed vegetables, crushed tomatoes, tomatoes with chilies, seasoning and beef broth.
  • Stir everything together, bring up to a boil, then reduce to low. Simmer the soup for 30 minutes.

Instant Pot:

  • Set Instant Pot to sauté. Brown the ground beef with the spicy seasoning.
  • Add in chopped onion, potatoes, frozen mixed vegetables, crushed tomatoes, tomatoes with chilies, seasoning and beef broth.
  • Place the lid on the Instant Pot and set to pressure-cook for 8 minutes.
  • Once the timer goes off, let the pressure release naturally, about 20 minutes.

What Makes This Soup So Good?

There are 2 things that make this soup so good. #1 is quality ingredients and #2 is the seasoning.

To bring out the best flavor in this simple recipe, I use a power-packed seasoning blend. Dan-O's all-natural seasoning is the perfect combination of herbs and spices. I use the spicy blend to cook the beef, and the original in the soup, which enhances the humble ingredients in this recipe.

Substitutions

For this recipe, I use ground chuck, but you can also use ground beef or even ground turkey. You can also add whatever frozen vegetable blend that your family likes.

How To Store Leftovers

Vegetable Beef Soup will keep for about 3-4 days stored in an airtight container in the refrigerator.

This soup makes a great freezer meal. Place the soup in a freezer-safe container or zip-top bag and freeze for up to 3 months.

  • 1 1/2 – 2 pounds ground chuck
  • 1 tablespoon Dan-O's Spicy Seasoning
  • 1 medium chopped onion
  • 2 medium peeled and diced potatoes
  • 1 28 ounce can crushed tomatoes
  • 1 10 can Rotel tomatoes with green chilies
  • 2 10 ounce packages of frozen vegetables
  • 1 32 ounce box of beef broth
  • 1 cup water
  • 3 tablespoon Dan-O's Original Seasoning
  • 1 teaspoon salt
  • In a large cast-iron skillet, brown ground chuck. Add in Dan-O's Spicy Seasoning and stir. Add cooked meat to the slow cooker.

  • Add in crushed tomatoes, Rotel tomatoes and chilies, chopped onion and potatoes, frozen vegetables, Dan-O's Seasoning, beef stock, water, and salt. Stir.

  • Cook on low for 6-8 hours or on high for 5-6

  • When ready to serve, stir soup and ladel into bowls and top with fresh parsley if desired.
